A Brief History of Italian Cuisine
The history of Italian cuisine is a fascinating journey through centuries of cultural exchange and evolving culinary traditions. In Ancient Rome, the ruling class feasted on roasted game, fish, wine, and exotic delicacies while the peasant class ate what we now refer to as a Mediterranean diet: olive oil, bread, wine, cheese, and seasonal vegetables. Early forms of pasta also began to emerge.
After the fall of the Roman Empire, other cultural influences were introduced. Arabian explorers brought citrus fruits, spinach, and rice. Ingredients from the New World like tomatoes, potatoes, and corn, arrived during the Renaissance era, with tomatoes becoming fully integrated. As regional differences became more pronounced, each area of Italy developed its own distinct culinary identity.

Northern Italy
Famous cheeses such as Parmigiano Reggiano, Gorgonzola, and Provolone are produced in northern Italy. Only the finest cheese is found in our authentic Neapolitan-style pizza and pasta dishes at Partenope. Balsamic vinegar is made from a reduction of pressed grapes and is allowed to age for a minimum of 12 years in the area of Modena. We use it in antipasti and salads.
Central Italy
Olive oil is produced throughout Italy, but the central region of Tuscany produces oil that is highly regarded worldwide. Jokingly dubbed “liquid gold,” olive oil is used in almost all preparations of Italian food, but many Italians enjoy its pure taste with freshly baked bread. We serve it with our tears and share bread, Pane, and our toasted house Bruschetta.
Southern Italy
Tomatoes are a culinary mainstay in Italian cuisine. Used in making sauces, pizza, salads, soups, and more, they find ideal growing conditions in southern Italy. San Marzano and Pomodorino tomatoes are grown in the area around Mount Vesuvius in Campania. The basis of our Ragù Napoletano is a slow-cooked tomato ragù with pork and beef.
Islands
The Italian island of Sicily is known for its rich volcanic soil, which produces an abundance of fruit such as lemons, oranges, grapes, and olives. Almonds are an important crop there, thanks to the warm climate and well-drained soil. Aromatic plants and herbs like basil are widely grown in Sardinia. We finish most of our pizzas with basil.
